The recipes are not ethnocentric -- Thai, Japanese, Moroccan, British, American, French, and Italian recipes are all represented. I also like a book whose whole is greater than the sum of the parts and that reads, at times, like poetry. The Quest Begins…. Overall a simple explanation of some complex subjects- geared toward the novice.
